Investigation of Some Quality Criteria of Catfish (Siluris glanis) balls Enriched with Chia and Flaxseed

چکیده
Bu çalışmada, farklı oranlarda (%4 ve %8) keten çiya tohumu ile zenginleştirilmiş yayın balığı (Silurus glanis) köftelerinin bazı kalite kriterlerinin incelenmesi amaçlanmıştır. Balık köfteleri depolamanın belirli günlerinde (1, 7 14. gün) toplam aerobik mezofilik bakteri (TAMB), psikrotrofik bakteri, maya-küf, tiyobarbitürik asit (TBARS), uçucu bazik azotu (TVB-N), pH duyusal parametreleri yönünden araştırılmıştır. Mikrobiyolojik analiz sonuçlarına göre köfte örneklerinde sayısı, kontrol grubu örneklere daha düşük bulunmuş tüm gruplarda depolama süresine paralel olarak artış (p<0,05) tespit edilmiştir. TVB-N değerleri grubunda yüksek bulunurken, TBARS değeri ilaveli balık köftelerinde saptanmıştır. Duyusal sonuçları incelendiğinde ise boyunca doku hariç gruplar arasından en çok beğenilen grup olmuştur. Çalışmamızda ilavesinin genel kriterleri üzerine olumlu etki ettiği görülmüştür.
